These typical “clickbait” headlines try to scare you, but the reality is much more prosaic. Cauliflower is a superfood, but it has two small “buts” that doctors actually mention:
- “Cauliflower causes… bloating” (flatulence)
This is the biggest “scandal”. Cauliflower is a cruciferous vegetable and contains complex carbohydrates (raffinose) that our bodies cannot fully break down.
What happens: The bacteria in your gut start fermenting them, and the result is… well, social embarrassment and a bloated belly.
Solution: Add cumin, fennel, or ginger to your cooking. It will help your digestion significantly.
- “Does cauliflower cause… thyroid problems?” (Strumigens)
Here’s a grain of truth for a small group of people. Cauliflower contains substances called goitrogens, which can interfere with iodine absorption.
Reality: You’d have to eat pounds of raw cauliflower a day for it to harm a healthy person.
Solution: Cooking (steaming, boiling) almost completely deactivates these substances.
Why should you eat it anyway?
Unless you’re on a strict diet due to kidney stones (due to oxalates) or a serious thyroid disorder, cauliflower is your friend:
Vitamin C: One serving will give you almost the entire daily dose.
Sulforaphane: A compound that’s being studied for its powerful anti-cancer effects.
Weight loss: It has a minimum of calories and will fill you up thanks to its fiber.
Interesting fact: Cauliflower is basically a “flower” that has not yet bloomed. We eat its undeveloped buds!
